Raised in a small town North-East of Milan, Daniele grew up in a culinary household, accompanying his parents to family-run Italian restaurants, contemporary venues that challenged traditional Italian food and everything in between. From an early age, Daniele remembers how much he admired the wait staff and restaurant owners’ ability to “make diners feel like they were welcomed into their intimate homes to try a special recipe”.
Daniele’s love of food stayed with him throughout his adolescence, so at the age of 19 he decided to pursue a career in hospitality and got his first big break into the industry when he was offered an entry-level job at a 5 star luxury resort in the Maldives. Daniele worked his way up the ranks at this resort to the role of Guest Relations Supervisor.
A taste for travel quickly developed and Daniele went on to work for a luxury resort in Zanzibar, Africa, and on-board one of the world’s most premium cruises, The Royal Caribbean International, before finding himself in one of Guy Grossi’s restaurants in Melbourne. Daniele said that it was at this restaurant where his passion was really set alight! He moved to Sydney one year later and was picked up by Bill Drakopoulos as the Restaurant Manager at Aqua Dining.
Daniele is now taking the next step in his career as the new restaurant owner and manager of Via Alta.
Damiano arrived in Australia in 2017 from his home region of Marche, in Italy’s north. He was armed with good English, a Diploma from the Italian Hotel Management Institute, and a hunger to learn from yet another country.
After completing his technical qualification in Italy in 2010, he concentrated first on deepening his knowledge of the regional cuisine of Marche, his home region in Italy.
The years prior to Australia Damiano had been honing his chef skills in London with stints in Clarke’s Restaurant in London, L’Atelier de Joel Robuchon, Nobu Park Lane, and more.
On his arrival in Australia he held the position of Senior Chef de Partie of Ormeggio at The Spit, and he quickly proved himself as not only a great cook but also an ambitious, creative, and reliable chef with a great passion for his work.
In his time with Ormeggio the restaurant held its coveted second Chef Hat with a 17.5/20 rating in the prestigious Sydney Morning Herald’s Good Food Guide and has been consistently recognised as one of Sydney’s leaders in pushing the boundaries of contemporary Italian cuisine.
Damiano moved to Via Alta in May 2018 and is just one of our talented and skilled chefs on the team!
